Surprise Pie
3 eggs whites (stiffly beaten)
3/4 cup sugar
1/2 cup flaked coconut
2/3 cup plain white cracker crumbs (19 crackers)
1 teaspoon vanilla
1 cup chopped pecans
1 teaspoon baking powder
Mix in order given. Pour into greased pie pan and bake at 325 degree for 30 minutes. Let it cool before putting whipped heavy cream on top.
Whip 1/2 pint whipping cream until stiffened. Add 5 tablespoon sugar and 1/2 teaspoon vanilla to beat smoothly. Spread whipped cream on cooled pie. Sprinkle top with finely chopped pecans if desired. Keep pie Chill.
